Cheezy Italian Tomato Soup
A creamy, satisfying tomato soup flavored with rosemary and basil.
Ingredients
- 2 tablespoons Olive Oil
- ½ cup Sweet Onion Chopped
- 1 tbs minced garlic
- 1 (28 ounce) can crushed tomatoes
- 1 cup heavy cream
- Lightly salt and pepper to taste
- Rosemary and basil optional to garnish
Instructions
- In a medium stockpot, heat the oil over medium heat until hot, then add the onion.
- Cook until the onion has softened, about 5 minutes and then add the garlic.
- Cook another minute or two until fragrant.
- Dump in the canned tomatoes and season with salt and pepper.
- Bring mixture to a boil, then reduce heat to a simmer and cook for 20 minutes.
- Add 1 pkt of The Dippin' Family Cheezy Italian Tomato Dip mix to the tomato base.
- Either puree the soup in a blender or use a hand immersion blender to puree the soup until very smooth.
- Return the soup to the pot to rewarm and add the cream.
- Taste the soup and adjust seasonings as needed.
- Serve soup warm with garnish of choice.

1 (19 ounce) package Johnsonville® Mild Italian Sausage Links

1 (16 ounce) package linguine

3 tablespoons olive oil

1 small sweet onion, thinly sliced

1 teaspoon minced garlic

1 (14.5 ounce) can diced Italian tomatoes

1 (10.5 ounce) can chicken broth
- 1 cup heavy cream

2 cups broccoli florets
Directions

Prepare sausage according to package directions. Cool slightly, then cut into 1/4-inch slices.

Prepare pasta according to package directions. Set aside.

Warm olive oil in a large saucepan over medium-high heat. Sauté onion and garlic in olive oil until tender. Stir in tomatoes, heavy cream, and chicken broth; bring to a simmer.

Add broccoli and cooked pasta to tomato mixture. Cook until broccoli is tender, about 5 minutes. Add sausage; toss to combine.
