Hatch Green Chile Quesadilla


Creamy Hatch Green Chile goodness

1lb seasoned ground beef (for best results use 2 tbsp. of "The Dippin Family" Taco-Riffic taco seasoning)
1 pkt "The Dippin Family" Hatch Green Chile & Chive Dip Mix.

1 cup Mayo

1 Cup Sour Cream

Diced Bell Pepper mix (frozen bag)

Shredded Cheddar Cheese

1 Large Flour Tortilla



~ Cook 1lb ground beef in 1/2 cup of water in a frying pan with seasoning of your choice. (for best results use 2 tbsp. of "The Dippin Family" Taco-Riffic seasoning).

~ Make Hatch Green Chile & Chive Dip Mix with 1 cup mayo, and one cup sour cream.

~Spread Green Chile & Chive mixture over one side of the Tortilla

~Add unfrozen Bell pepper mixture, shredded cheese, and ground beef to flour tortilla, and fold as desired.

~Cook in a buttered frying pan, flipping once so both sides become crisp

Hatch Green Chile Chicken Enchiladas

 

2lb Chicken Breast Family
1 pkt. "The Dippin Family" Hatch Green Chile & Chive Dip Mix

1 cup Mayo

1 Cup Sour Cream

1/4 cup Milk

Shredded Cheddar Cheese

Burrito Size Tortillas


~ Prepare 1 pkt. Hatch Green Chile & Chive Dip Mix with one cup of mayo and one cup of sour cream.

~ Place half of the Hatch Green Chile & Chive Dip Mix mixture in a slow cooker along with the chicken breast whole. Add 2 cups of  water.

~Slow cook until chicken is tender and easily shredded with forks.

~ Strain extra moisture from chicken and portion evenly into flour tortillas.

~Roll tortillas and place into a baking pan.

~Add 1/4 cup of milk to remaining Hatch Green Chile & Chive Dip Mix mixture to thin it out. Ladle the mixture over the top of the enchiladas.

~Top with shredded cheese and bake at 350 until cheese is melted.

~ Garnish with lettuce, cilantro, tomato, or whatever you like.
